Apple and Almond cake recipe:
300g plain flour
1 tsp ground cinnamon
½ tsp bicarbonate of soda
140g treacle sugar
50g golden caster sugar
250ml sunflower oil
2 unpeeled apples, coarsely grated
100g Almonds, roughly chopped
Add the flour, cinnamon and bicarbonate of soda together, mix so well combined.
Then add the sugars.
Mix the eggs and oil together, then slowly add to the above ingredients and mix on a slow speed with a whisk attachment.
Then grate the apple and add it to the mixture and finally fold in the almonds.
Line a round baking tin with grease proof paper, and preheat the oven to 170 degrees Celsius, put the cake to bake for approximately 45 minutes to an hour. Test to see if the cake is baked through.
Whisk the butter till white and fluffy.
Then add the icing sugar until well combined.
Mix the coffee and with a few drops of warm water to dissolve, then add to the butter.
