Hey everyone! The one thing that I am constantly doing during Ramadaan, is snacking. I never really have a big appetite so having a great snack is perfect. I made these banana fritters yesterday, they’re light and easy to make. I know traditionally they are deep fried but I tried to make them a little healthier by only using a blob of butter and coconut flour in the batter.
2.5 mashed bananas
1/4 teaspoon bicarbonate of soda
2-3 tablespoons of cake flour
1 tablespoon of coconut flour
1/4 teaspoon of salt
1/4 teaspoon of baking powder
Butter for frying
Mix all the dry ingredients together
Add the bananas with a fork to allow the mixture to aerate
Scoop a small tablespoon of mixture into the pan to fry and press the fritter down so it looks similar to a flapjack.
