More colours, more healthy!

Good Morning everyone!

I woke up this morning not feeling too great, and the only way I know how to get better ASAP, is by eating fruits and veggies packed with lots of vitamins! I was always told, that the more colour on your plate, the healthier the meal is. And this yoghurt infusion I had for breakfast is no exception. I infused blueberries and grapefruit (which is high in Vitamin C) with Jasmine tea overnight, and this morning I stewed them to make a compote like consistency, and drizzled that over plain Greek yoghurt. It is really easy to make but also very nutritious!

 

 

Recipe: Blueberry and grapefruit infused with Jasmin, drizzled over yoghurt

Ingredients:

 

  • 120g blueberries (frozen or fresh)

  • 3 tablespoons honey

  • 2 teabags Jamine tea

  • Half a grapefruit

  • Coconut shavings 

  • Edible flowers

  • 2 teaspoons Xylitol (optional)

  • 3 tablespoons of yoghurt (per serving).

 

Method:

  • Brew the tea overnight if you can or until cool. 

  • Add blueberries to half of the tea and the honey in a pot, and boil over a medium heat until simmering and you can see the blueberries thicken. 

  • Blend the grapefruit and Jasmine tea- cook on the stove for about 5 minutes to reduce it and to remove some of the bitter taste. You can add Xylitol if you want to sweeten it. 

  • After the blueberries and grapefruit have cooled, drizzle it over the yoghurt and enjoy!
