Banana fritters recipe!

Hello fellow foodies! I made these last night (as seen on my Instagram stories) for dinner. They were so light and fluffy. I enjoy having these during Ramdaan because it is not too heavy to eat and is perfect with a cup of tea when you're just relaxing and enjoying a good series.  

 

Recipe: Banana fritters

 

Ingredients:

  • 3 mashed bananas

  • 1/2 cup full fat milk

  • 2 cups of sifted flour

  • 1 pinch of salt

  • 2 tablespoons of brown fine sugar 

  • 3 teaspoons baking powder

  • 2 eggs-beaten

  • 1 tablespoon butter-melted

  • 1/2 cup coconut oil for frying

  • 2 teaspoons of cinnamon and sugar

Method:

  • Mash the bananas and add the milk, mix well. 

  • Then add the dry ingredients-sifted, followed by the sugar

  • Finally, add the eggs and the melted butter and combine well. 

  • Let the coconut oil simmer, and use a tablespoon to scoop the mixture into the pan. 

  • Once the fritters are browned on either side, remove, and put on a paper towel to drain excess oil and dust with the cinnamon sugar.
