Hello fellow foodies! I made these last night (as seen on my Instagram stories) for dinner. They were so light and fluffy. I enjoy having these during Ramdaan because it is not too heavy to eat and is perfect with a cup of tea when you're just relaxing and enjoying a good series.
Recipe: Banana fritters
3 mashed bananas
1/2 cup full fat milk
2 cups of sifted flour
1 pinch of salt
2 tablespoons of brown fine sugar
3 teaspoons baking powder
1 tablespoon butter-melted
1/2 cup coconut oil for frying
2 teaspoons of cinnamon and sugar
Mash the bananas and add the milk, mix well.
Then add the dry ingredients-sifted, followed by the sugar
Finally, add the eggs and the melted butter and combine well.
Let the coconut oil simmer, and use a tablespoon to scoop the mixture into the pan.
Once the fritters are browned on either side, remove, and put on a paper towel to drain excess oil and dust with the cinnamon sugar.
