Blueberry breakfast crumble

Good morning fellow foodies! So I know I am very delayed in uploading this post but I am a total scatter brain in the fast. I love the baking aspect and never forget to do that, but a post requires me to write a recipe and I take for granted the picture says it all (which it does not).  Nevertheless, better late than never! I made this blueberry crumble a few days ago and it is my go-to snack every night and most mornings for breakfast. Being healthy during Ramadaan is a bit tough so I like to make something healthy to snack on so I don't automatically reach for nearest samoosa or pie. This crumble slighted heated in the microwave, with a dollop of plain yoghurt is absolutely divine, and can be enjoyed any time of the day! Let me know if you try it :)

Recipe: Blueberry crumble

 

Ingredients:

  • 3 cups of blueberries (or any kind you really like)

  • 1 cup of castor sugar 

  • 2 teaspoons vanilla essense 

  • 3 cups of oats

  • 1 cup of melted butter

  • 1/3 cup of flaked almonds

  • 1/4 cup honey

  • 1 cup of flour

 

Method:

  • Mix the blueberries with the sugar and vanilla essence and set aside.

  • Now add the oats, flour, almonds together. 

  • Melt the honey and butter together. 

  • Add the melted honey and butter to the dry ingredients. 

  • Pour the blueberries into a round or square dish that is oven proof.

  • Spread the oats mixture over the berries, but not to cover them entirely. 

  • Let it bake in the oven at 180 degrees C, for about 25 minutes and until you see the oats are toasting and becoming a nice golden brown colour.
