It's been quite a busy week on my side, so baking has kind of taken a slight back seat it terms of being creative. But! I was craving cookies last night as I didn't have any on stand-by and I couldn't bring myself to buy some, so I just baked a few. These are a combination of all your (and my) favourite things, peanut butter, chocolate and corn-flakes! I hope you love the recipe as much as I do!
Recipe: crunchy cookies
160g melted butter
1 cup of light brown sugar
1/2 cup Xylitol
1/3 smooth peanut butter
1 tbsp vanilla essence
1 egg yolk
2 cups flour
1/2 tsp baking soda
3 cups corn flakes
200g dark chocolate, cut into chunks
Mix together the butter and sugars.
Put into a mixer and add the peanut butter and cream the mixture.
Add in the eggs and vanilla essence.
Sift the flour and baking soda and add to the mixture.
Lastly, add the corn flakes (crush slightly in your hands while adding to the rest of the ingredients), then the chocolate chunks.
Use an ice cream scoop to scoop out little balls of the dough and place onto parchment paper on a tray. Let the cookie dough balls chill int he fridge for an hour, then bake at 160 degrees C, for 15-20min.
