Gluten and sugar free pancakes!

Good morning everyone!

Monday has dawned upon us yet again and I'm starting this week off by sharing this lovely and healthy pancake recipe!It's very simple to make but if you find the batter is slightly too soft, then just add more flour/almond flour. Nothing has to be made gluten or sugar free- make it the way you want and the way you like it!

 

Recipe:

Ingredients:

  • 300g sifted almond or coconut flour

  • 10ml baking powder

  • A pinch of salt

  • 25g sugar/I used xylitol

  • 1 large egg

  • 15ml sunflower oil

  • 440ml buttermilk

  • 130g bananas-mashed

 

Method:

  • Add the dry ingredients to a bowl-and sift together.

  • Whisk the buttermilk, oil and egg together.

  • Lastly add the mashed bananas, and allow the mixture to rest for 15minutes. 

  • Fry on a low heat with coconut oil to start and then slowly turn up the heat as you please.
