Overnight-raspberry-chia-oats

Good morning, or should I say good afternoon everyone!

I had a very late morning, due to a rather busy work week. When that happens, my body decides to go into hibernation mode for a bit so I can recover my strength and energy. As most people do, including me, I woke up starving this morning! And decided to have my over night oats which I made last night (almost knowing that my body would need it!) for breakfast/brunch this morning. I combined cocoa chia pudding with oats and yoghurt and swirled in some raspberries and strawberries and the outcome was simple perfection! Sometimes just having fun in the kitchen with no recipe book or method to follow results in some awesome miracle! Because I wanted to share this with all of you, I definitely wrote it all down for you to try, I hope you love it!

 

Recipe: overnight oats

 

Ingredients:

2 cups oats

2 tablespoons cocoa

2 tablespoons honey

1/4 cup chia seeds, 

1 heaped teaspoon peanut butter

1/3 cup raspberries

1/3 cup strawberries

2 cups of full cream yoghurt 

1 cup almond milk (coconut milk works too)

2 teaspoons shredded coconut (optional)

 

Method:

Combine the milk, chia seeds, peanut butter and cocoa. I used a hand blender to bend it altogether. 

Let it stand for about 10-15 minutes to allow the chia seeds to soften.

In a separate bowl, combine the rest of the ingredients. 

When that's done- and the chia pudding mix to the oats and mix well. 

Leave in the fridge overnight (if you can stay away for that long). 

Enjoy with fresh berries and shredded coconut on top!
