I hope you are all having a wonderful Wednesday and I'm sure you're all (much like me) looking forward to the weekend. We are almost in the middle of November, and when the Christmas lights start to come up, it makes me realise how much I still have to do. If anything I use this time as my motivation to finish up everything and tie all my loose ends so I can start the new year fresh!

I am also very aware of the fact that at this time of year, I indulge in the sweeter things in life, and decided that as much as I have my cravings, I can make them somewhat healthy, queue these Flourless, sugar-free brownies. They are the perfect "guilt free" snack and as much as they do lack the gluten and sugary flavour of other brownies, they are still rich in dark chocolate and taste amazing when warmed up and garnished with your favourite ice-cream.

Ingredients:
225g dark chocolate (I use 70% Lindt chocolate)
225g butter
1 vanilla pod
200g coconut sugar
3 eggs, beaten
250 ground almonds
50g chopped pecans
50g chopped almonds
Method:
Preheat your oven to 170 degrees C.
Melt the chocolate and butter on a slow heat, until everything is melted together and you see a beautiful chocolatey mixture.
Remove the pan, mix in the vanilla and the sugar.
Take a whisk and use it to whisk in the egg, ground almonds, chopped pecans and whole almonds.
Bake in a square tin, roughly 20-25cm tin.
Bake in the oven for 15 minutes, and remove to check if the inside is still liquid. Do not let it bake for over 25 minutes as there is no flour so it will burn if left for too long. The consistency should be very soft, but once you let it cool and then refrigerate for about 10-15 minutes, it will be perfect.
