Salmon poke bowl

The beauty of a poke bowl is that you can add pretty much anything you like to it, and below I've written down in detail the main components of my poke bowl, but it can obviously be altered to what you are feeling for on that day. 

 

Instead of sticking to a strict diet, I think it's a great idea to add a ramen bowl or a poke bowl to your meal plan a few times a week. I don't condone eating too much raw fish as it may not agree with your system and too much is bad for you, but once a week, raw salmon or tuna is great. Your protein options can be cooked as well, they don't only have to be raw, especially if you are trying to add it to your weekly diet. 

 

I hope you love the salmon and egg noodle recipe as much as I do, it's very quick and easy and makes it so much easier when you have these ingredients in your house- trust me you'll want to make it even more often!

Recipe: Salmon poke

Serving suggestion: serves two

 

Ingredients for salmon:

 

250g fresh salmon, cut into cubes

1/4 cup soy sauce, low sodium

2 tbsp. honey

1 tsp. white vinegar

2 tsp. Sriracha sauce

1 tsp. sesame oil

2 tsp. sesame seeds

 

Method for salmon:

 

Combine all the above ingredients and add the salmon last and toss well. 

Let the salmon rest in the sauce for about 10 minutes so it can fully absorb the mixture. 

 

Ingredients for the drizzle over the poke bowl:

 

2 tbsp. Sriracha sauce

2 tbsp. plain Greek yoghurt

1 tsp sesame seeds

1/2 tsp honey

 

Method for the drizzle sauce:

 

Whisk these ingredients well, and chill for a few minutes and drizzle over the entire poke bowl so it doesn't seem too dry. 

 

Ingredients for pesto egg noodles:

 

1 pack of egg noodles

3 tbsp. homemade (i made my own) pesto sauce

1 handful of basil

1/4 cup feta cheese

1/4 cup coconut cream

 

Method for pesto egg noodles:

 

Boil your egg noodles on a medium heat until al dente- not too soft or they will break easily.

Drain the excess water when the noodles are done, add the pesto, feta and coconut cream on a low heat and stir quickly to combine all the ingredients. 

Serve in you poke bowl along side other vegetables. 

 

 

* Add your choice of vegetables to the poke bowl. 

  Popular options are: Sliced cabbage, avocado, purple cabbage, spring onion, green beans, beans    sprouts, thinly diced carrots, pickled cucumber, kimchi etc.
