Snacking is probably the one thing that gets me through my day. If you're like me and just want to snack on healthy and delicious treats, then this recipe is a must! It combines the health benefits of carrots, dates and coconut. Each of these brings something different to the flavour but also vitamins and nutrients you would never think to get in such a small and yummy bliss ball.
Carrots: Have a high source of antioxidants (like most orange fruits and vegetables), which helps to boost your immune system, thereby keeping colds at bay, which is great especially with the change of season. Carrots contain a fiber, that act as a natural digestive system brush, getting rid of plaque and tooth decay.
Dates: There are so many I'll just name a few, such as they help with constipation, diarrhea, anemia, to name a few. Dates help with the prevention of over eating, because once the body has fully digested the date and its nutrients and sugars, the feeling of hunger is pacified. The natural sugars in dates, help to boost energy levels throughout your day.
Coconut: the natural oils in coconut help to keep your skin and hair healthy and youthful looking, improves good cholesterol (HDL), improves digestion and absorption of nutrients and coconut supports immune system health, whether it be anti-viral or anti-fungal.
Recipe: carrot cake bliss balls
2 cups desiccated coconut (1 cup for the mixture, the other cup for rolling)
1 large carrot, fine grated
1/4 cup dried cranberries
12 Medjool dates, pitted
1 tbsp. almond butter
1/1 tsp. salt
1/2 tsp. vanilla extract
1/2 tsp. cinnamon powder
1/4 tsp. nutmeg
Place all the ingredients in your blender, and blend until they are all combined.
Scrape the mixture out of the blender, wet your hands slightly, so it doesn't stick to your hands and start rolling 2-3cm balls.
If you like, you can then use the remainder of the coconut to roll your bliss balls .
Drizzle with melted almond butter if you desire, and enjoy!
