Breakfast for dinner? Yes please! I love the idea of layering different flavours and textures and that is shown beautifully in parfaits, with a little bit of yoghurt, fruit and a good crunchy granola, to mix things up a bit. Over the last week or so, while its been Ramadan I haven't had an appetite whatsoever, and yes I know ones stomach does shrink but it's been to my detriment because I start feeling weaker during the day. So this evening, I had one of these delicious mango lassi parfaits and I finished the entire thing (I mean who wouldn't). I decided to put the recipe up this evening so for any of you who don't know what to have for breakfast, here is a great idea!
I infused the Greek yoghurt with tinned mango (mangoes aren't in season in SA but fresh magoes would be the better option) and added a teaspoon of rosewater and the flavour was mind blowing-like a real mango lassi! I hope you try this recipe and let me know if you love it as much as I do!
Recipe: Mango lassi parfait
2 cups Greek yoghurt
1/3 can tinned mangoes
1 teaspoon rosewater
1 teaspoon chia seeds
Blend it all together using your blender, Nutribullet or hand blender and that's it!
For the fruits I used seasonal fruits, such as grapes, raspberries and guava, giving me a good dose of vitamin C too.
I didn't have time to make my own granola, so I simply mixed together, toasted coconut flakes, some pecans, 1/4 cup GF oats and dried cranberries. And then I used some leftover baked granola that I already had. didn't add any sweeteners but you can use honey or maple syrup of the berries are a bit sour.
