Today I decided to spice up my lunch and dinner routine by making my very own homemade chicken patties, and what a great idea that was! I mean that without any sarcasm, because they really did come out wonderfully! It's not very often I go into the kitchen without having a basic idea of what I want to make, but today the ingredients just came to me and the flavours I had in mind were available (no runs to the store for this girl, yay!).
I have been gymming daily as of this week and with that comes healthy eating (naturally), so making my own food rather than going to buy food is really the best thing I can do for myself. I love knowing exactly what ingredients are going into my meal and simple things, like buying free-range chicken is very important to me.
Usually this chicken patty would would take me roughly 20 minutes to make but because I was recording a video for you all (a how-to), it took about 2 hours (haha!), so if you want to see the step by step video of how I make this, please go check it out on IGTV (search for inthemidnightkitchen), and if you enjoy watching these videos, please let me know so I can make more for you guys!
Recipe: Chicken patty's
Cut the chicken finely, basically mince the chicken yourself. I prefer buying the chicken fresh and going through this step.
If your bread is still fresh toast it until it becomes light brown, and put both slices into a food processor until you have breadcrumbs.
Now add all the above ingredients together and mix well.
When everything has been added together, take a good amount into the palm of your hands and make the mixture into a ball and then lightly press down, and flatten it to create your own round patty.
Heat your stove with some olive oil, and fry the patties lightly on each side until they become brown and crispy.
I garnished mine with rocket leaves, tomato, cheese and mayonnaise, but you can add what ever you like.
