Buttermilk Pancakes

Happy Sunday Everyone!


Felling the calm and relaxing vibes today in a big way, so much so that I took my time in the kitchen this morning, (well late late morning) to make these buttermilk pancakes! I've always loved buttermilk pancakes because of the texture it brings, along with the fluffiness of the pancake! They're so light and tasty that I must have had at least 4 (no lies, I'm dead serious), and the rest I put in the freezer because I'd probably want more tomorrow morning.

Recipe: Buttermilk pancakes

Type: normal 

Makes: 7 pancakes




1 1/2 cups self raising flour 

1 tsp. vanilla essence 

1/4 tsp. bicarbonate of soda

1 egg

1 tbsp. brown sugar/xylitol

1 cup buttermilk 

2 tbsp. melted butter 

1 tso. chia seeds

Coconut oil/butter for frying




Whisk together the plain flour, bicarb, sugar/xylitol and set aside. 

Then in a mixer, blend together the egg, buttermilk, vanilla essence and melted butter. 

Add the wet ingredients to the dry and let it stand for about 5 minutes. 

Fry in a medium pan with some coconut oil and voila! I drizzled mine with maple syrup, and add fresh papaya and frozen raspberries.
