Recipe: Potsticker dough
2 1/2 cups plain flour (more for dusting of necessary)
1/4 tsp. salt
2/3 cup boiling hot water
1/3 cup cold water
Mix the flour and salt together and then add the boiling hot water, and mix quickly with a wooden spoon.
Then once the dough has absorbed the hot water, add the cold water and continue mixing until well incorporated.
The dough will look very messy, as if it's not working with pieces not sticking, but this is normal.
Begin kneading the dough with your hands for a while until the dough comes together.
Once the dough seems ready it won't be as smooth as other dough's but this is to be expected.
Place in a bowl with a damp cloth or paper towel over it (touching the dough), then cover the bowl with cling film and let it rest for 20 minutes.
Being to roll outa long roll and from there cut out little pieces (as seen in the video) and finally, roll out small circles.
This will form the dough for your potsticker.
2 chicken fillet
1/2 green cabbage
1 red onion
1 pound/ 1/2 punnet of assorted mushrooms
1 minced garlic and ginger
2 tbsp. Sriracha sauce
1 tsp. sesame seed oil
1 tbsp. Hoisin sauce
2 tsp. soya sauce
Chop all the ingredients very finely.
Add everything to a heavy based sauce pan and allow to cook on a medium heat until the chicken is cooked through.
Add a small portion of the mixture to the inside of the circle of the dough.
Fold into a pleat/simple half moon shape (as seen in the video)
Once they are done, heat a sauce pan with sesame seed oil, and once the pan is hot add the potstickers.
When they become quite brown at the base, pour in 1/2 cup of lukewarm water and immediately cover the top of the pan with a lid to allow the potsticker to steam. This will cook the dough and puff up your potstickers.
Sprinkle with sesame seed oil and some chill and enjoy!
