As you lovelies may have noticed, vegan chocolate anything is my fave, and I actually love making them as well! I find recipes that are vegan inspired to be easy and simple, while also maintaining such a beautiful flavour! I like to throw in different types of nuts and nut butters to mix it up, and honestly you can add whatever you love to have in your healthy snacks, as long as they are blended well.
I have yet to find good vegan snacks in Cape Town and I'm sure it's around I just have to look, but for now I'm going to share this with you all and keep making these snacks because they also keep for a really long time. They're very healthy and have the best taste ever, it's one of those recipes where you can never feel guilty about eating too much, so eat as many as you like! They have a peanut butter base and a strawberry and pomegranate layer on top, covered in dark chocolate-AMAZING!

Recipe: Chocolate bon bons
Type: Vegan treats
3/4 cup peanut butter/almond butter
5 dried apricots
3 tbsp. water
2 tbsp. maple syrup
1/2 cup coconut flour
300g dark chocolate, for coating
1 cup of strawberry and pomegranate jam
1/4 cup almond, chopped for decoration
Put all the ingredients into a food processor, save for the dark chocolate and blend until the mixture has a flour/soft texture.
Flatten the mixture into a square baking tray lined with parchment paper, about 3cm high.
Freeze for 20 minutes and after that smear on the jam in an even layer.
Freeze again for 30 minutes, and then cut into small squares and dip into the melted dark chocolate.
These can be kept in the freezer for up to 3 weeks, enjoy cool or slightly warmed.
