Apple Streusel Slices

Good afternoon fellow foodies!

 

I have had a rather busy month and it's something I am so proud of! I will be spilling the news this coming Monday, so for all my followers you will know first! Having said that, my blog has taken a slight back seat, I noticed that managing my time no matter how old I get is still something I need to perfect. I did, however, not pressure myself into doing too much and only doing what I could. I think that balance is very important and is something I try and work on everyday. 

 

In and amongst all of this going on, I had a sweet craving and decided to not waste my apples and make a classic apple streusel! I haven't made these in ages and forgot why because honestly it is the easiest thing to make and looks like you have slaved away in the (midnight) kitchen. 

 

Recipe: Apple streusel

Type: Normal

 

Ingredients for the base:

 

 2 cups plain flour

22g butter

1/2 cup coconut sugar 

1/2 tsp. vanilla extract

1 egg

1/2 tsp. cinnamon

 

Filling: 

 

4 red apples, peeled and chopped

1 tsp. cinnamon

1 tsp. mixed spice

1/4 cup coconut sugar 

 

Crumble:

2 cups plain flour

1/2 cup coconut sugar 

229g cold butter

 

Method:

 

For the base combine the flour and butter first and wait till the mixture has combined very well. 

Then add the rest of the ingredients, and combine well. Use a square dish lined with baking paper and press the base in and refrigerate. 

 

The filling is very simple, chop the apples into your desired cubes and add all the ingredients to a pan and stir until the apples have gotten a bit soft. 

 

Once the apples have cooled down, place onto the base and refrigerate. 

 

Lastly, combine the crumble ingredients and sue your fingers to mix the butter into the flour and sugar mixture. Clump the crumble into your hands to create bigger lumps and sprinkle onto the apples and bake for 20-30 minutes at 180 degrees C.
