Breakfast Series: Vegan Pancakes

Happy Monday!

This series is about getting back into your routine whether that be sporadic eating, lack of exercise or possibly even a difficult sleeping pattern. I am kicking off this series with these amazing vegan pancakes that are so easy to make and I think that is the most important part about getting breakfast back into your routine. Once a recipe or meal looks too difficult to do, we think that we might as well avoid it anyway, because it will take up time we don't have. 

 

Therefore, every recipe I post this week will be as easy to make as possible so that everyone can make it and most likely ingredients that are right in your home. 

This is one of my favourite vegan recipes, it tastes amazing and is so light, that after eating about 3, I was not feeling bloated nor full.

Recipe: Vegan Pancakes

Type: Vegan 

 

Ingredients: 

 

  • 1 cup plain flour

  • 1 tbsp. baking powder

  • 2 tbsp. coconut sugar 

  • 1 cup lactose free milk

  • 2 tbsp. melted coconut oil

 

Method:

 

  • In a bowl whisk the flour, sugar and baking powder together

  • Then add the milk and coconut oil and whisk until there are no lumps at all. 

  • Let the mixture stand for about 10 minutes (this is crucial to let the baking powder activate)
