Gluten-free chocolate brownies

Hello lovely people!

I have been down with a bug for the last few days and it has really left me feeling completely useless, and I know it's okay to not be at 100% all the time, but for me it just feels like I haven't done enough. It is definitely something I struggle with and try really hard to manage, and during this sickly episode that I still faced with, I decided to take a few days off social media and work to just be sick and focus on getting better. 

 

Today was the first day that I felt a bit more like myself (even though I am not fully there yet) and decided that I wanted to bake something sweet and healthy at the same time, and then came these delicious chocolate brownies which are gluten-free and refined sugar-free. 

 

I really believe that you can still have sweet treats whenever you like, but cutting out sugar for example and replacing it with a healthy substitute will really make the difference in how you see food. These brownies I think are the perfect treat to have with tea or as an on-the-go snack, and they can be made even when you have no time.

Recipe: Gluten-Free chocolate brownies

 

Ingredients:

 

1/2 cup butter

1 cup chopped dark chocolate (70%)

1 cup almond flour

3 1/2 tbsp. cocoa powder

1 tsp. baking powder 

A pinch of salt 

3 eggs

1 cup coconut sugar

2 tsp. vanilla extract

 

Method:

 

  1. Pre-heat your oven to 175 degrees C.

  2. I use Lindt Dark Chocolate (70-80%) because I feel it gives the best consistency when baking and it never separates when it is being melted. 

  3. So I melted together the butter and chocolate in the microwave until it was warmed, but not too hot.

  4. Then whisk together the almond flour, cocoa powder, baking powder and salt until there are no lumps left. You can use a sieve as well, if you find that it is easier. 

  5. In a separate bowl whisk together the eggs, coconut sugar and vanilla. 

  6. Add the cooled melted chocolate and butter to the egg mixture and combine well, then add that to the dry ingredients and mix with a spatula. 

  7. Pour into a square or round baking pan, and make sure to grease proof the inside so the brownies don't stick to the base. 

  8. Put into the oven and bake for 25 minutes. 

  9. I added strawberries to the top prior to baking to add something different, you can add whatever you like or enjoy them as is.
