Happy Friday Everyone!
Today I am gifting you with this banana bread recipe that is also gluten-free! I like to add GF foods into my diet as it assists with my IBS symptoms and doesn't leave me feeling bloated throughout the day.
I am going to keep this post short and sweet as the recipe will definitely do all the talking!

Recipe: GF Banana Bread
2 cups of gluten free flour (Mine was from Woolworth's)
3 ripe bananas (extra for topping if you want)
1/2 cup white sugar
1/2 cup butter
2 tbsp. lactose free milk
1 tsp. vanilla
1/3 tsp. coarse salt
1 tsp. baking powder
1 tsp. baking soda
A handful of Cadbury's chocolate chips
Cream the butter and sugar together until it gets to a smooth texture. I used my Kenwood mixer with the creaming attachment.
Separately, whisk together the baking soda, baking powder, salt and gluten-free flour.
Add the eggs, milk and vanilla to the mixer with the butter and sugar.
Mash the bananas, make sure they are very ripe, and add to the now egg mixture.
Then add in the dry ingredients and mix lightly for about 15-30 seconds. Don't over mix.
Add in the chopped chocolate.
Place into a standard sized loaf tin and grease well.
Bake for 40-50 min.
Allow to cool and then enjoy!
