I have been finding it so hard to find the time to actually sit down and write a blog post, never mind a newsletter! And I feel like before Friday lunch and just after Friday prayers, it will have to be the time, so here I am writing this recipe out for you because it's waaay over due!
I made these cookies sometime last week and they are so totally done that I desperately need to make more! If you're household is like mine, then you essentially thrive on home baked goods, no one likes to buy baked goods due to the fact there is a chef around, so here I am!
These cookies are made with almond flour, so they are fully gluten free but then again that also brings about the fact that they are quite soft and easy to chew. Personally, I like a cookie with a bit of a crunch but these are packed with so much goodness and delicious flavours that I don't even miss the crunch. So definitely try these and the beauty about them is that you can add nuts and other nut butters to the batter and the texture will be the same!
Recipe GF chewy cookies
2 tbsp. liquid coconut oil
3 tbsp. honey, melted
1 large egg
1 tsp. vanilla extract
2 cups almond flour
1/2 tsp. baking soda
1 cup dried cranberries
2 tbsp. macadamia nut butter
Pre-heat the oven to 180 degrees celsius and line a baking tray with parchment paper
Melt the honey and coconut oil together.
Add in the egg, nut butter and vanilla and whisk to combine.
Add in the flour baking soda and cranberries and give it a good stir with a spatula or wooden spoon.
Scoop a tablespoon of the batter on to the parchment paper, or use an ice cream scoop. They can be quite round, they flatten a little bit in the oven.
Bake for 15 minutes, until the bottoms are browned nicely and then remove and place on a wire rack.
