I am just going to pos the full blondie recipe here too, as it is on my Instagram as well. I find it very hard to bake while looking at a phone for guidance so for some this may be easier. I made them gluten free so they won't leave you feeling heavy and bloated at the end of the day and you can use pretty much any nuts you like and top it off with dark or milk chocolate :)
Type: Gluten Free
6 tbsp. butter
1/4 cup oat flour
1 cup chopped almonds/assorted nuts
3/4 cup nut butter
1/2 cup maple syrup/honey
1 tsp. cinnamon powder
1/2 tsp. nut meg powder
2 tsp. vanilla extract
1/2 tsp. baking powder
1/2-1 cup dark/milk chocolate
Preheat oven to 180C, line an oven proof (square) tin with parchment paper.
In a pot add butter and nuts and boil until the butter gets foamy and the nuts begin to brown. Once the butter seems to be going golden in colour, remove from the heat. Separate the butter and nuts for now.
In a large bowl, add the butter, maple syrup, nut butter, cinnamon, nutmeg, oat flour, maple syrup and whisk until smooth.
Add eggs in one at a time, and lastly add half the nuts and half the chocolate to the batter.
Place batter into tin and smooth the top, top off with the remaining nuts and chocolate and bake for roughly 20 minutes or until the batter puffs up in the oven and looks golden brown.
Let cool before cutting and enjoy!
