I am all about quick and easy recipes for this month because one has zero energy when it comes to putting in maximum effort when all you want to do is nap. Keeping that in mind, I do believe that eating in a simple way and keeping your food non-complex but still delicious is a healthy and wholesome way to live. Something I do outside of the fast as well and a habit I would love to master in time.
This gluten free ciabatta loaf is my absolute favourite and the way in which this was made, is designed to be adapted for you and your taste. I really wanted to make a simple breakfast loaf so this one is filled with eggs and cheese with a few baked mushrooms in the between. I garnished with chopped chives and enjoyed with some mayonnaise.
Like I said this is such a simple recipe and I had it for dinner, because who said breakfast can't be had at night?? Here is the recipe for you all, and if there is anything else you would like to see in these last few days of Ramadaan please do let me know.

Recipe: Baked savoury loaf
1 gluten-free bread loaf
1 cup of chopped cheese, I used cheddar
1 cup sautéed mushrooms- garlic, steak and chops spice (Inna Paarman's)
Chopped chives for garnish
Salt, pepper, herbs and paprika to taste
Preheat your oven to 180C, and line a small baking tray with parchment paper.
Using a large ice cream type spoon, scoop out round portions of the loaf, to create medium sized craters all around. Then use a knife and make large slits in the gaps that haven't beens scooped out.
Crack eggs in all the spaces you have made scoops, and sprinkle some grated cheese on top of that.
Put the mushrooms in the slit spaces and the cover with cheese so ti can melt over the mushrooms.
Salt and pepper once everything is done and bake in the oven for about 15-30 minutes, or until the egg is baked to your desired consistency.
