Hello Lovely People!
It's another Monday and I for one am excited for this week, as I am travelling to London this week! Our wedding is coming up soon-ish and my mother and I decided to go on a little trip, just us two, to do some shopping and have some bonding time in my old stomping ground. As excited as I am, I am also currently dealing with a low immune system, which has come in the form of extreme fatigue, aches and pains and mouth sores. I have zero idea where all this came from, all I know is that I need to do some resting this week and for me resting also includes baking and experimenting in the kitchen. I could assume that wedding stress is also part of it, and as much as I am quite prepared maybe my body is going through something- who even knows.
In the midst of me trying to recover and replenish my stolen immune system, I made these super easy vegan fudge squares which have become my standard snack and a healthy one at that. This recipe is fully vegan and gluten-free, and as much as vegan does not mean "weight-loss diet", the ingredients I put in here are wonderfully tasty and healthy which won't leave you feeling guilty after, one, or two or three :)
I hope to be posting a few more recipes this week and then one or two while I am away, otherwise, most of my content will be about eating spots in London, best areas to stay in and what activities you should definitely try out!
Recipe: Vegan fudge
Type: Vegan and Gluten-Free
1/2 cup desiccated coconut
1 cup almond butter
1 cup macadamia butter
1 1/2 tbsp. cocoa powder
A pinch of salt
1/3 cup maple syrup
1 tsp. vanilla essence
1 cup dried cranberries or fresh dates (pitted)
1 tbsp. melted coconut butter (organic)
Cacao nibs for toppings
Dehydrated strawberries for toppings
Using a good food processor (I used my Kenwood Multi Pro which made this process so easy and blended everything perfectly) blend the desiccated coconut further for about one minute.
Then combine all the ingredients until the consistency seems crumbly, when you press it down you will see it smoothes out.
Prepare a square tin, lined with parchment paper, and press down the fudge, top with you desired toppings.
Freeze for about 2 hrs.
Before eating, allow to cool and store in the fridge from there.
