Anything chocolate that comes up is automatically a winner for me, and when I'm told that it is also healthy, then I am SOLD! I have forever been a fan of dark chocolate and if you have been following me, you will know this is true. So to add pure, organic cocoa powder to this recipe, was an absolute treat for me! It was only a few ingredients and once the method was over, it was just about setting the pudding and waiting for it to be eaten.

Recipe: Vegan chocolate chia pudding
Type: Dairy free, Gluten Free, Vegan
1/3 cup chia seeds
1 cup almond/rice milk
1/3 cup coconut cream
3 tbsp. cacao/cocoa powder
1-2 tbsp. maple syrup (honey if you aren't vegan)
1/2 tsp. cinnamon
1/3 cup melted dark vegan chocolate- optional
Pinch of salt
Put all the ingredients into a container with a lid, give it a good shake and then let it stand for about 15 minutes. After that, shake it once more, decant into the bowls you would eat from, and allow to sit in the fridge for an hour or overnight.
