Hello lovelies! Today I had such a craving for a savoury bite and you know how much I love pastry, so I made this amazing tarte soleil which is a French dish, and this particular one has a vegetable filling. I added in spinach and feta and a few other ingredients to add a bit of a kick, and I think it came out so beautifully seeing as it was my first try!

2 rolls of puff pastry
1 1/2 packets of spinach
2 cloves garlic
1/2 tsp. paprika
1 egg (for egg wash)
1 cup of chopped dill
1/2 lemon zest
1 tsp. salt
1 tsp. pepper
1 1/2 cup feta
1/2 a small onion
Roll out the puff pastry on a floured surface and take a pot lid and place on top, and then cut out a circle. Do the same for the second sheet of puff pastry.
Wash and cut spinach, sauté with some olive oil and allow it to shrink a bit, once it is ready, strain using a cloth and twist the edges to remove as much water as possible.
In the meantime, put the puff pastry aside, and starting adding in the spinach, salt, lemon, pepper, onion, dill and mix.
Egg wash the sides of the puff pastry, just on the base not the top level. Place the spinach mixture on top and allow about 1cm clean of the border. Place the second circle of puff pastry on top, and lightly pat down the edges to secure it.
Using a cookie cutter, place in the center of the closed puff pastry dome and lightly press down, do not pierce the pastry.
Then cut the dome into four equal parts, then divide those parts into two as well. Gently pick a strand and twist 3-4 times, and press down the ends so the shape stays. Once this is done, place in the freezer for 10 minutes, then remove and egg wash.
Bake in a preheated oven for 30 minutes at 180 C.
