It feels so good to be back in the kitchen and to be able to make delicious recipes again! Today was just one of those days that I felt like being extra for lunch and making a stunning batch of prawns. Because my husband and I have begun this Mediterranean diet, you can expect a lot of seafood on my blog as well as vegetable based recipes.
This recipe is really easy and it makes you look like you spent hours in the kitchen, meanwhile this only took me 30' to make from marinade to plate. I hope you like this recipe and let me know if you want more quick style recipes like this one!
2-3 tbsp. Mayonnaise
1 tsp. sun dried tomato paste
2 tsp. Nandos Peri Peri
A bunch of coriander
1-2 tbsp. Olive Oil
1/2 green chilli
1 tsp. lemon juice
A pinch of salt
Black Pepper to taste
This recipe can be adjusted if you are using more prawns, but we bought a standard bag of prawns, which was enough for three people to enjoy comfortably.
Use a flat pan and drizzle with olive oil and set aside.
In a medium sized bowl, mix together all of the above ingredients (chop the coriander finely).
Open the prawns up into a butterfly shape and using a teaspoon spoon the marinade on top of the prawn meat.
Heat your pain so it starts to sizzle, place your prawns fave down, shells up.
Press them down as they are cooking using a spatula so they don't curl up.
Make sure each side has a beautiful caramelised glaze (almost burned) look.
Remove from the pan and enjoy with brown rice and vegetables for a Mediterranean meal.
