Today is the day before moving day and I needed to eat dinner but I also wanted something easy and chilled. I decided to make tuna fishcakes/kebabs because they're super easy and I've been enjoying them for years. I won't make this a long post because one is exhausted from carrying boxes all week long lol.
Have a great evening everyone and please do make these, they are so nutritious and wholesome. We made a mash potato side dish which fit perfectly with this main meal.
Recipe: Tuna fishcakes
2 tins of tuna
Handful of coriander
1 can of Indian style tomatoes
1 tsp. thyme
1 tsp garlic powder
Salt and Pepper to taste
1 tsp. coriander powder
1-2 tsp. paprika
1/2 tsp. chilli flakes
3-4 slices of bread- dipped in water
In a bowl combine the tuna, eggs, spices, chopped coriander and bread (crumbed), stir everything together until it is well combined.
Heat a large pan with olive oil, once warmed up, form round balls out of the tuna and place them in the pan with some space in between.
Fry until both sides are nicely browned.
Remove the fried fishcakes and add in the tomatoes, warm the sauce up and then place the fishcakes on top and enjoy.
*You can buy the Indian style tomatoes from Woolworths/PnP (RSA).
