I love having popcorn as a snack, it keeps me from eating all the unhealthy foods but with this recipe I decided to spruce it up a bit and actually make a sweeter version! I also never make the popcorn if I'm being honest, the hubby always does but I needed to do it myself for this one. And not one burnt popcorn- can you even imagine the level of success I was feeling!?
So here's the recipe for you lovely people, I hope you love it and you can add other condiments if you want to, there are no rules here!
1 1/3 cup popcorn kernels
2 tbsp. butter (for popcorn)
2 tbsp. butter (for caramel)
1 cup light brown sugar
1/2 tsp. bicarbonate of soda
2-3 tbsp. whipping cream
In a large pot, melt the butter and turn the pot so the butter coats up the sides of the pot.
Once melted, add in one kernel and wait for it to pop so you know you can add the rest.
After you've added them all, keep on a medium heat and close the pot. When the popping slows down, remove from heat and leave the lid on till it' done.
Remove from the pot, into another large bowl and let it cool while you make the caramel.
Melt the other butter, and then add in the sugar.
Stir for about 5 minutes until it comes together and get's a bit thick.
Allow to come to a quick boil and then add in the bicarb, then stir quickly.
Add in the cream and whisk quickly, remove from heat and pour over pop and stir well.
Turn the popcorn out onto a greased baking tray and allow the caramel to set, then enjoy!
