How to make my easy banana fritters:

Ramadan is once again upon us and I am starting off this Ramadan series with “How to make easy banana fritters”. As many of you already know, this is by far one of my favourite recipes to make during Ramadan. These are incredibly light and they use really basic ingredients making them an easy treat.

I have another post on banana fritters linked here , where the bananas are mashed instead of being used whole. This recipe shows you how to make them using whole banana rounds instead of mashing them. I like to make mine for the Iftaar table (dinner table as we are about to break our Fast). Many people enjoy making savouries and would add these as a sweeter treat when having dinner.

A few tips on how to make easy banana fritters

  1. If you would like to, dust your cut banana rounds with 1 tablespoon of corn starch. This will allow the batter to stick to the banana better. It may seem a bit difficult to get the batter to stick to the corn starch, but just coat it as best you can and it will eventually take.
  2. Make sure your oil is between 160C and 170C (320F-340F). This will allow the batter to cook the inside as well as the outside and avoid oil seeping in.
  3. You will know when the fritters are done when you have a golden brown colour on the outside. Keep flipping them and do not leave the stove.
  4. I like to dust mine with icing sugar but this is totally optional.
  5. Banana round should be 1-2cm in thickness, they can be bigger but I find this is perfect for a bite size amount.

Ingredients

  • 1 1/4 cup self raising flour

  • 1 tsp. baking powder

  • 1 tbsp. granulated sugar

  • 1 large egg

  • 1/2 cup milk

  • 1 tsp. vanilla extract

  • 1 tbsp. melted coconut oil

  • 2 medium bananas

  • 1 tbsp. corn starch

  • 1 1/2 cups oil for frying

  • Dust with icing sugar (optional)

Directions

  • Sift together the flour, baking powder and sugar and set aside.
  • In a separate bowl, whisk the egg, milk, cooled coconut oil, vanilla extract and add it to the dry ingredients and whisk to combine.
  • Cut your bananas into 1-2cm rounds.
  • Sift the corn starch over the bananas, it’s okay if they’re not all coated.
  • Heat the oil and once it’s ready, coat the bananas in the batter and place into the oil.
  • Fry 3-4 at a time, not too many as this will cool the oil down.
  • Once they’re golden brown, place onto a paper towel to remove excess oil.
  • Dust with icing sugar and enjoy!
